Cookies
Last weekend for the Midsummer Festival at the Genesee Country Village and Museum. We were invited to join in the festivities and provide cookies for the visitors. "How many?" I ask. "About 1000 should do it," Shaunta says. 1000! I say to myself. I'll be baking until the cows come home! "Okay," I say. "I'm in." I must be out of my mind. A 1000 cookies will take me a couple of days at least! Two days and 1000 cookies later, I am at the Art Gallery in the Museum dressed in my Civil War garb passing out recipes and talking to hundreds of people. The temperatures are in the 90s, but fortunately, the gallery is air conditioned and I'm enjoying the cool air. Pictures of the Genesee Country Inn are on the backdrop. It is a long evening, but wonderful. My feet hurt from all the standing and my throat is dry from all the talking. Here is the recipe for my Shaved Chocolate Cookies:
Shaved Chocolate Cookies
Ingredients 3 cups all-purpose flour 1 cup granulated sugar 1 cup light brown sugar, packed 1 cup butter 2 eggs 1 teaspoon baking soda ½ teaspoon salt 2 teaspoons real vanilla 1 cup shaved semi-sweet chocolate Preheat oven to 375º F. Cream butter and sugars until smooth. Add eggs, vanilla, baking soda, and salt. Beat until smooth. Add flour. Stir in shaved chocolate. Drop by teaspoonful on an ungreased cookie sheet. Bake for 8-10 minutes or until golden brown. Cool on rack. Store in an airtight container.
