SoyI just read a rather interesting article in Utne called the Dark Side of Soy. Of course today, in the Unitied States, soy is herealed as the big saint of health foot, and is consumed in mass, there are several subsitute soy products. Soy milk, tofu, there is soy vegitable oils, soy flower, and the list goes on.
One of the reasons soy is reaguded so, is becasue studies showing that heart disease and certain cancers occur in considerbaly low numbers in Asian cultures, and soy is seen as contributing to that, which is a big part of thier diet, and soy does indeed have some health benifits.
But leave it to America to take a good think and turn it bad. This where American greed, consumersion, obcession, supply and demand, technology, alwyas knows best attitude comes to bite them in the ass.
In Asia they consume only about 9 grams of fermented soy, and usually within sauces or soups known as miso.
Most American soy products contatins more than 20 grams of non-fermented soy. In addition, to as they always say, too much of a good thing can be bad, non-feremented soy acutally contains anti-nutraints.
On top of that, for one thing America has found a way of extracting every single part of the soy bean for use, including parts which were never traditionaly used for human consumtion, and the way it is processed in America can acutally cause potentialy harmful additites to the soy.
In eddition, to that, people are consuming soy they do not even know about becasue of the fact that soy in one form or another is used as an indgrediant in a wide varity of different products sometimes under other names such as: textured vegitable portian, hyrolyzed vegtiable portian, or lecithin.
Also, not every soy bean is alike, and there can arise certain problems in the transfering process between here and Asia, as well soy beans that are grown in the Unitied States may not be the same was those grown in thier natural enviroment.
Of course it is imporant to understand, that is not to say that soy is "bad" or lacking in benifits, only, it is best when used in moderation, and the way it was originaly intended to be used. 10:33 AM - 4/1/2008 - post comment
