There is an old proverb that runs "Why should a man die who has sage in his garden?" This herb was the most essential in preserving (an even its was thought creating) life. A general tonic for both mind and body, it is rightly regarded for its digestive properties which is why it is a famous accompaniment for fatty meats like goose, duck, pork and lamb. While also being a tonic for the nerves and stimulating to the circulation. This makes it an ideal tea for anyone suffering from stress or exhaustion, and it is wonderful for those who are recovering from illness. Red (or purple) sage is the correct choice for throat infamations, but use garden sage plentifully in cooking to keep in good health and promote an efficent working system. Make a strong decoction (15 grams of dried, or 10 fresh sage leaves steeped in boiling water for 10 mins.) to combat skin irritations.
